My name is Aaron Darke the founder of the Zymurgorium. I had the idea of setting it up after a long period brewing for my peers at university, I never started with kits I prefer to make my own or forage my own like my family has taught me; materials such as rose hips for wine & beer to damsons, sloes, elderflower, woodruff on and on and on because of my fascination with what nature has to offer us never ceases. Who knows I might be picking produce near you right now!
My fascination and love of all things natural shows also in my products, I have a number of products from where I actually forage or grow the materials myself.
A STORY OF CULTURE, SCIENCE AND REBELLION…
My inspiration not only comes from nature but also of my love of culture, variation and science (which gives a clue as to the strange brand name). I aim to give my customers the best experience throughout the world whilst also hopefully educating (and perhaps being educated myself by my patrons!). So you’ll see my products begin to evolve the more I learn about new ways of fermentation, preserving and creating flavour sensations, I will never put anything up which I have not tried myself so if you’d perhaps like me to try and make a new product then let me know guys!!!
You’ll notice that my range will be ever expanding this is because I wish to produce greater variation as I believe the world’s variation and diversity of culinary experiences has waned in the past however recently there is now a renaissance in people wishing to know the origins of food and to experiment!
Also these overwhelming blandness and underwhelmingly dull experiences in our world are public enemy number one. Rebelling against the status-quo, bringing out true quality and flavour from ingredients is what drove me to start experimenting all those years ago and is what keeps us ahead now in innovation and just plain awesomeness! Being a fond hand at teaching I’ll also be in the future having tours, talks and also lessons once the premises is fully fitted out!

Zymurgorium Proprietor and Big Cheese
The Zymurgorium at heart is a Meadery, Brewery & Distillery but is so much more than just that…
The Zymurgorium name comes from an amalgamation of the word Zymurgy and also Emporium; Zymurgy is the study of scientific brewing and an emporium is a shop that sells various items and trinkets so therefore my Zymurgorium sells various brews (among other things…).
The Zymurgorium aims to give its patrons only the best of brewing experiences and taste bud adventure & diversity! From fruit/vegetable beers, to old and new techniques in the sacred art of distillation, to ancient lost ciders and honey wines, an abundance of ingredients and an almost endless supply of brewing and distilling styles…
The products that will mostly feature on the brewing side will be; Meads with a few crafty Beers and Ciders sneaking in. In our distilling world we’ll mostly be making never-seen-before Gins & Liqueurs mostly but will also have a cheeky dip in other spirits too!
However the world is not all about the H3C-CH2OH molecule (alcohol) and it would be unfair to exclude those for whom would like a clear head in the morning so the Zymurgorium will also be forming relationships with manufacturers in preserves such as syrups that can be drizzled over food, used in cooking or can be made into wonderfully aromatic and flavoursome lemonades, cordials & Mocktails! The Zymurgorium will also be showcasing food that is fit for a banquet from cheeses, butters and preserves with full on flavours only go to compliment our range to make it even more irresistible!
The Zymurgorium aims to make as little impact on this world and aims to improve standards if anything so all our practises are as environmentally friendly as possible so that means trying to source ingredients a locally as possible to reduce carbon footprint or using the least harmful transportation method, future improvements to energy usage and experimenting with new ideas, helping those less fortunate e.g. our freaking environment & wildlife plus any of the farmers in the third world we rely on for our amazing products (otherwise I’m sure KONGO would fall of Big Ben in shock!).
The Zymurgorium also believes in helping others find their way so it’ll be looking for talent along the way to help boost CV’s and take full advantage of our country’s vast wealth of talented individuals so keep looking on our blog for the possible chance to enter competitions or even join the team itself!
Back in 2012 we embarked on our first entrepreneurial adventure and made Darke Crafts which quickly turned into the Zymurgorium in 2013.
At this time we were Britain’s sole craft meadery making Craft Meads and higher quality Luxury styles. And it’s great to see this scene is now growing in the UK!
Aaron: “The craft mead really started back in Uni when I had a friend who couldn’t have cider due to being intolerant to pectin so I thought I’d make something similar to quench his thirst!”
Essentially Craft Meads are more like craft beer. We use different honey types such as hops and malt are used in beer. Having the Benefit of having some of the best tech in mead business we can make meads others cannot!
These meads are being represented by our in-house playboy bee ”Bertie” who’s going to be travelling around the world bringing us back some utterly rebellious mead styles! Why not join in his exploration now!
Our award winning luxury meads can take years to complete and are considered by some to be better or perfect alternatives to grape wines.
We have been growing in strength year on year following the USA boom in mead. We’ve got some awesome plans in the near future for our craft mead so stay tuned in for the best craft meads we’ve made yet!

So we started off as the UK’s first brewing rogue in the world of craft mead, we then dipped our toes into the craft beer scene what on earth could we do next to finish of the whole emporium?
Well to be honest we always had this aim… We are also now Manchester’s first and presently only craft distillery!
we’ve been banging, clanging, crafting and smithing away at some of the most outrageously classy gins, vodkas, rums and liqueurs!
Our Manchester Gins first arose in Jan 2014 which since have grown in number and quality ever since! The popularity of which we have nearly not been able to cope with! But thanks to the people’s desire of our products we have expanded into a bigger and better distillery and are going to be smashing the status-quo of the spirits world!
What makes us different is that we are uncompromising in quality and also have multiple distilling and infusing technologies on site to ensure only the best of the particular styles leaves the Zymurgorium!
As already mentioned we make awesome mead and spirits but we also brew some outrageous irreverent craft beers and refreshing ciders. Our brewery and cidery processes were opened up not long after the meadery was established. It stems from testing many foraged recipes on University Guinea Pigs by Aaron and has been going strong. Although not our main focus we keep to our promise to make a product for everyone and in every bottle resides the uber care and quality we pump into all our products!
